Yum! Perfect for taking to work for lunch.
Or have it for dinner – no carbs, no gassey stuff, no stinky stuff, just good clean yummy food.
Ingredients
- Bag of baby spinach leaves
- Sun-dried Tomatoes – roughly chopped
- Snow peas
- Feta
- Avocado
- Shallot - chopped
- Chicken Fillet – sliced thinly
- Chilli or Cajun seasoning
- Olive Oil
- Vinegar
- Salt & pepper
Method
- Fry the chicken slices in salt, pepper, olive oil and lots of Cajun seasoning or chilli until the chicken is cooked through
- Mix in chopped sun dried tomato and cook for a few more minutes
- Mix the snow peas, spinach, shallot, feta and avocado and a bowl.
- When you are ready to eat, put the chicken on top
- Drizzle a bit of olive oil and vinegar on top, mix and EAT!
