cold chicken saladYum! Perfect for taking to work for lunch.

Just cook the chicken the night before and then mix in the salady stuff the next day.

Or have it for dinner – no carbs, no gassey stuff, no stinky stuff, just good clean yummy food.

Ingredients

  • Bag of baby spinach leaves
  • Sun-dried Tomatoes – roughly chopped
  • Snow peas
  • Feta
  • Avocado
  • Shallot - chopped
  • Chicken Fillet – sliced thinly
  • Chilli or Cajun seasoning
  • Olive Oil
  • Vinegar
  • Salt & pepper

Method

  • Fry the chicken slices in salt, pepper, olive oil and lots of Cajun seasoning or chilli until the chicken is cooked through
  • Mix in chopped sun dried tomato and cook for a few more minutes
  • Mix the snow peas, spinach, shallot, feta and avocado and a bowl.
  • When you are ready to eat, put the chicken on top
  • Drizzle a bit of olive oil and vinegar on top, mix and EAT!
